A restaurant manager is accountable for a profit and loss statement, a schedule and a health inspection, usually all in the same week. Ownership and multi-unit directors read the resume as a financial document: revenue managed, food cost, labor cost, turnover, inspection scores and guest ratings. Service instinct is assumed; what gets screened is whether the candidate has moved those numbers in an operation of comparable size.

What matters on a restaurant manager resume

Scope defines the reading. Annual or weekly revenue, seat count, covers per week, team size, number of shifts managed, and whether the operation is independent, franchised or part of a group. A manager running $3.2 million in annual revenue with 45 employees is being evaluated against different openings than one running a 60-seat cafe, and neither can be assessed without those figures on the page.

Cost control is the core evidence. Food cost percentage and its trajectory, labor cost as a percentage of sales, prime cost, inventory variance, comp and void rates, and waste programs. Every one of these is a number the candidate either has or does not, and their absence is the most common reason a management resume is passed over for one of equal experience.

People and compliance carry the rest. Prime cost, revenue managed and turnover are the three numbers a multi-unit director compares candidates on. A management resume without them is read as a shift supervisor resume regardless of the title.

Junior vs. senior

An assistant manager or shift lead resume shows ownership of pieces of the operation. Shifts run independently, scheduling for a department, cash reconciliation and deposits, inventory counts, training new servers or cooks, handling escalated guest issues, and opening or closing accountability. Any result driven personally, such as a reduced void rate or a faster table turn, matters more than the title itself. A general manager resume reads as a business case. Full profit and loss responsibility with revenue figures, prime cost trajectories over years, openings or remodels led with timelines, management teams hired and retained, marketing and catering revenue built, vendor contracts negotiated, and results across multiple units when applicable. Reporting relationships should be explicit: to an owner, a regional director or a franchisee, with the number of units and employees under the candidate.

Common mistakes in this role

Restaurant manager resumes tend to fail in these places:

  1. No financial numbers. A management resume without revenue, food cost or labor cost is asking to be read as an experienced server.
  2. Team size missing. Ownership needs to know whether the candidate has led 8 people or 50; the difference is the job.
  3. Turnover ignored. Staffing is the field's hardest problem, and a manager who has improved retention should lead with it.
  4. ServSafe Manager left off. Most jurisdictions require a certified food protection manager on site, so its absence is a compliance question.
  5. Inspection and rating scores omitted. These are public, verifiable results and among the most persuasive items available to a manager.
  6. Systems unnamed. Toast, Aloha, 7shifts and inventory platforms are searched by name; generic "POS experience" matches nothing.
